I know the ZZ stands for double seal but I have no clue what the other letters indicate.

If you insist on a deep groove ball bearing like a and the speed isn't an issue, you could opt for one with less clearance, ISO suffix code C2.
It will have a bit more friction, but will be stiffer.
In general 2Z or ZZ means two shields, RS/RSL/RSH is a "rubber" seal but not all designs have equal sealing capabilities.
You need to check the website of the bearing manufacturer to see what all the codes mean as they tend to make up their own standards.....

What degree of precision do you hope to ahieve in the finished work?
The reason I ask is "cylindrical grinding attachment " invokes "high precision" in most minds, precision on a level requiring angular contact ball bearings of P4 or ABEC Greade 7 or better. These are not cheap but they seem to be the default bearing class specified for precision grinding spindles. They are 10 to 25 times the cost of their general purpose counterparts..
Plin vanilla deep groove bearings may have an radial clearance of 0." when assembled and an axial float of 0.015" maybe more. This uncertainty of radial and axial positioning is reduces to zero plus or minus a deflection under load in a matched pair of opposed preloaded angular contact ball bearings. If the general purpose bearing will suit your application, fine but if precision radial and/or axial spindle positioning is paramount you will have to consider a preloaded pair. Roller bearings are available in precision grades but the sizes available are limited and they are even more costly than comparable angular contact ball bearings.
What this precision buys you is better achievable finish, closer product tolerances. better wheel life between dresses, ect.
Of course one can tinker the preload spacers on deep-groove ball bearings to create
something that is close to a preloaded angular contact pair. It's time-consuming and
requires some pretty close gaging (I used a federal electronic indicator when I did mine)
but it would save some money. The pair would develop the preload and the axial
and radial runout would be in the ballpark for this application. The spindle runout
might be a bit high but it could be trued in place once assembled. I don't think somebody
like Jim Glass would have a very hard time at all doing this.

Some of it yes, but bearings do not repeat their runout from one rev to the next as the balls don't make a full rev with the races.
You can't "fix" low tolerance bearings by grinding in the assembly.

is just a ball bearing. Semi precision is and is angular contact. I doubt these come as sealed bearings. Neither are "roller" bearings

7 = angular contact
3 = series (robustness) (3 is medium series)
09 = bore diameter (09X5 = 45mm bore)
A means the same except six designated deep groove ball bearing.
Precision is designated by the P numbers or ABEC numbers... The lower the P number the higher the precision, the higher the ABEC number the higher the precision.. bout P5 and ABEC5 are similar specs...
Fafnir use their own nomenclature for their precision bearings...
Internal clearance is the C numbers...
Other letters are for things like the cage, external design, internal design, vibration, heat treatment etc..
